At the end of my hen weekend last year, my best friends made me a hen book - full of amazing memories, hideously embarrassing photos, and their favourite recipes. My sister's offering was this brownie recipe - one which makes gooey on the inside, crispy on the outside moorish squares of deliciousness.
These are the kind of brownies where, every time you make them, someone will ask for the recipe. Chuck in some dried cranberries, fresh raspberries or nuts if you fancy - or just enjoy their pure chocolatey chunks.
It's an easy recipe too - just ten minutes' mixing plus a half hour in the oven.
Ingredients
125g butter
150g dark chocolate
175g brown sugar
2 eggs
55g plain flour
1 tsp vanilla extract
` tsp baking powder
Recipe
Melt the butter and 50g of the chocolate
In a separate bowl, mix the sugar, flour, eggs, vanilla extract and baking powder, plus the rest of the chocolate, broken into small chunks
Add the melted chocolate mixture, plus any extras like berries or nuts
Throw into a square or loaf tin
Cook for 30m at 180 degrees C.
If you eat it whilst it's still warm, the chocolate chunks are especially gooey...
